Easy Cucumber Salad (Gluten Free)

This is my version of a cucumber salad. It is really easy and keeps well.  Instead of using a pasteurized white vinegar, I use a raw naturally fermented coconut vinegar which is gluten free, full of many important minerals and contains "mother" due to its natural fermentation.
Ingredients (serves 3-4 side dishes)

Directions
  1. Place sliced cucumber in a medium size bowl.
  2. In a small bowl combine dill, vinegar, stevia and salt.
  3. Pour vinegar mixture over cucumber stirring to fully coat.
  4. Let sit in the fridge for 30 minutes or longer before serving.

  1. Thought I'd leave you a note - I just made this for the second time in two days - it's delicious! I used apple cider vinegar b/c that's all I have on hand, and it's great. Very light, refreshing . . . I've doubled it both times, had it for lunch and then snacked on the leftovers all afternoon. A real winner - thanks!
