Ingredients (makes 2-3 side salads)
- 4 cups washed kale (torn into bit size pieces)
- lemon juice from 1/2 a lemon
- 5-7 drops liquid stevia
- 1/4 teaspoon sea salt
- 1 tablespoon olive or grapeseed oil
- 1/3 cup dried cranberries
- 1 diced avocado
Directions
- Place kale into a large bowl and pour lemon juice over top. Using your hands rub the lemon juice into the kale for 1 minute. The lemon juice will soften the kale.
- In a small bowl mix the oil, sea salt and stevia and pour over kale. Using your hands rub the oil mixture into the kale until well coated.
- Add cranberries and avocados and serve. If you want to keep this salad and serve a little later I would add the avocado at the end to avoid it turning brown.
