Ingredients (serves 3-4 side dishes)
- 1 thinly sliced cucumber
- 1/4 cup chopped fresh dill
- 1/3 cup coconut vinegar
- 5-7 drops liquid stevia
- 1/4 teaspoon sea salt
Directions
- Place sliced cucumber in a medium size bowl.
- In a small bowl combine dill, vinegar, stevia and salt.
- Pour vinegar mixture over cucumber stirring to fully coat.
- Let sit in the fridge for 30 minutes or longer before serving.
Thought I'd leave you a note - I just made this for the second time in two days - it's delicious! I used apple cider vinegar b/c that's all I have on hand, and it's great. Very light, refreshing . . . I've doubled it both times, had it for lunch and then snacked on the leftovers all afternoon. A real winner - thanks!
