Ingredients (serves 2-3 people)
- 1/2 tablespoon oil, I used coconut oil
- 4 eggs
- 1/2 cup chopped kale
- 1 tablespoon non dairy milk or water
- dash of sea salt and pepper
Directions
- Heat skillet with oil.
- In a small bowl mix eggs, milk and spices and set a side.
- Add kale to heated skillet and cook for 1-2 minutes until soft.
- Add egg mixture to pan and scramble together with the kale.
- Serve.
