Smoothie's are really my go to meal when I am feeling lazy or just feeling like our meal needs a bit more nutrition. I find it a great way to get in some extra nutrients and the girls love them. I have made this one a few times this week and never seem to make enough. Kale takes a little longer to blend then spinach so make sure you blend it well.
This smoothie is full of Omega 3 fatty acids from the chia seeds and the avocados. The kale adds in vitamin A,C, K AND calcium. Enjoy!
Ingredients (makes 4 cups)
- 2 cups chopped kale, stalks removed
- 3/4 cup raspberries
- 2 ripe avocados pitted and peeled
- 2 tablespoons ground chia seeds
- Probiotics (optional-I use 2 capsules of Dr. Udo 25 billion enzymes)
- 3 cups coconut milk or other non dairy milk
Directions
- Place all ingredients in a blender and purée until very smooth.
- Serve immediately.
I made this, but mine turned out green, not pink. :( It was still good, though. I added a little bit of stevia and honey to make it sweet.
