Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 3 minced cloves garlic
- 1 1/2 tablespoons garam masala
- 1 1/2 teaspoons ground coriander
- 1 teaspoon turmeric
- 1 1/2 teaspoon curry powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (or to taste)
- 8 cups chicken or vegetable broth (or combination of water/broth)
- 2 bay leaves
- 2 cups dried red lentils
- 2 1/2 cups chopped cooked chicken or turkey
- 1 cup coconut milk
- juice from 1/2 a lemon or 1 lime
Directions
- In a large pot heat oil. Cook onion for 3-5 minutes. Add garlic and spices. On a low to medium heat and while stirring cook spices (except bay leaves) for 2-3 minutes to bring out their flavours.
- Add broth, bay leaves, lentils, and chicken.
- Bring to a boil and add coconut milk.
- Cook on for approximately 20 minutes until lentils are tender and flavours are blended.
